A traditional family blend of Biancolilla, Moresca, Carolea and Tonda Iblea, produced in Caltagirone (CT), 100% Italian.

Olive Groves & Harvest:

  • Altitude: 240 m a.s.l. in the rolling hills of the Monti Iblei
  • Planting system: 6×6 – 7×7 and ancient, irregular century‑old trees
  • Harvest period: first week of October
  • Harvest method: manual selection

Yield & Processing:

  • Yield per hectare: 4,000 kg of olives
  • Oil yield: 12–15 litres per 100 kg of olives
  • Extraction: cold‑pressed continuous cycle
  • Filtration: none, natural decantation

Sensory Profile:

  • Colour: veiled green, naturally clarified
  • Aroma: full‑bodied with balanced bitterness and pungency
  • Taste: fresh herbaceous notes with an artichoke finish

Recommended Pairings:
Excellent on grilled meat and fish, salads, raw and cooked vegetables, bruschetta and legume soups.
