Fritz Trafoier's traditional bakery in the Ultimo Valley in South Tyrol is renowned for its delicious, crunchy Schüttelbrot.
If you ever join a South Tyrolean “Marende”(afternoon snack), Schüttlebrot will never be missing. The Schüttelbrot’s dough is shaken properly before baking, which explains where the name comes from (schütteln = shake).
Since baking bread used to be more difficult in the past, the Schüttelbrote were dried to make them last longer.
This is where South Tyrolean Schüttelbrot gets its origins.
